If you travel to southern Mexico and visit the high altitude coffee farms (fincas), as I did on a recent visit to El Equimente in Coatepec, Veracruz, you may learn that the coffee producers there recognize four regional microclimates: Veracruz, Chiapas, Oxaxa, and Puebla. Each region contributes quality varietals to what is increasingly becoming an excellent source of specialty coffee production.
